Manila Over Linguine

Did you know that Manila clams are succulent and nutritious? They are high in protein, low in fat, and a rich source of zinc, iron, magnesium and selenium. But what makes Manila over linguine a rich, delizioso (delicious) meal is the fact that Manila are the meatiest, sweetest and the most tender and flavorful clams of the West Coast.

Manila clams over linguine is one of my favorite comfort food. It's delizioso (delicious), easy to make and it takes about 10 minutes to prepare. While you cook one pound of linguine (the time needed to cook the pasta al dente, meaning not overcooked), sauté some garlic in extra virgin olive oil in a large pan, add peperoncino (hot pepper), a couple of pounds of Manila clams, fresh minced parsley, a fresh-squeezed lemon and cover it.

When the clams open up, they are done. Toss them over the drained linguine, sprinkle more minced parsley and enjoy them. Buon Appetito!
