Italians prefer "la brace" or "la griglia" (charcoal fire or ember used to grill) over baking as their preferred cooking method.   In this photo, courteously provided by Tony R., Ristorante La Vittoria, Guardia Sanframondi, Italy, it is featured "l'arrosto" or grilled meat, which is one of the favorite "secondi" (main courses) served with "lattuga" (lettuce), fresh lemon juice, sea salt, chives and extra vergin olive oil.
